I love Chocolate and I love sharing my recipes and creations! If I am going to indulge in chocolate, it has to be nourishing and I must be able to savor every bite. These Raw Chocolate Bites do just that and are the perfect afternoon treat with tea or as a healthy dessert. They are so simple and can be made in less than 30 minutes. You simply have to prepare ahead by soaking your almonds over night. Bon Appetit!
Soak 2 cups of organic almonds in clean water
Let sit over night.
The next day rinse and dry on a clean towel.
Soak 2 cups of organic pitted dates in bowl of clean water until soft.
Save the water from the dates.
In a food processor, pulse the almonds and the dates until they are well blended.
Add 1/2 cup to 1 cup of raw organic cocoa powder, depending on your taste.
Add 1 tsp of vanilla
Pulse again and slowly add some of the date water until the consistency of the mixture is fairly smooth .
You should be able to roll a ball between your hands and it should stick.
Pour unsweetened organic coconut tiny flakes into a bowl.
Roll the dough into a small ball between your hands and then roll in the coconut.
Place the balls in the refrigerator for several hours so they can harden a bit. Enjoy!!
