
This was a favorite recipe of mine back in the early 80’s. I had to upgrade the ingredients because back then, eating “healthy” was whole wheat and honey. LOL! The updated ingredients are light, tasty and nutritious. The flax adds a bit of crunch and fiber to the cookies. Enjoy them for a snack or a tasty desert bite. Bon Appétit!
In a large bowl add the following ingredients:
2 cups almond flower
½ cup ground almonds
½ cup flax seeds
4 Tbsp. Xylitol or sweetener of your choice
1 tsp baking powder
1 tsp salt
Stir gently.
In a smaller bowl add the following and whisk gently:
2 eggs
½ c melted coconut oil
1 tsp. vanilla extract
1 tsp. almond extract
Add the wet ingredients to the dry and mix thoroughly. The dough will feel and look “wet”, but should stick together in a ball.
Drop by teaspoon unto a baking sheet with parchment paper.
Bake at 375 for 8 -10 minutes, or until the bottoms are slightly brown. Enjoy!
