This idea came from a dear friend Carla in Oregon. I had always steamed beets or grated them for salads. Baking the beets brings out the wonderful flavor without any added spice. It is so simple and they are a great colorful and nutritious addition to any meal. Bon Appétit!
Plan on 1 large organic beet per person
Wash and scrub the beets. Pat dry.
Slice the beets as thinly as you can and place them, side by side, on an oiled cookie sheet. I prefer to use coconut oil since it has a higher cooking temperature and does not turn rancid like olive oil does.
Bake at 325 F for about 20 – 30 minutes, depending on how crunchy or soft you like them. Enjoy!!
