
This idea came from a dear friend Carla in Oregon. I had always steamed beets or grated them for salads. Baking the beets brings out the wonderful flavor without any added spice. It is so simple and they are a great colorful and nutritious addition to any meal. Bon Appétit!
Plan on 1 large organic beet per person
Wash and scrub the beets. Pat dry.
Slice the beets as thinly as you can and place them, side by side, Â on an oiled cookie sheet. I prefer to use coconut oil since it has a higher cooking temperature and does not turn rancid like olive oil does.
Bake at 325 F for about 20 – 30 minutes, depending on how crunchy or soft you like them. Enjoy!!
