Banana Cake

This is a lighter version of your typical banana bread. There is very little added sweetener to it because the bananas have their own natural sweetness. You can add extra nuts if you want to add more crunch. Since the cake is made with almond flour, you are enjoying the nutritional benefits of the almonds: magnesium and manganese and lots of fiber. Bon Appétit!

In a large bowl combine the following:

3 cups almond flour

½ tsp. salt

1 tsp. baking powder

1 cup chopped nuts (if desired)

In a separate bowl combine and mix the following:

¼ cup grapeseed or coconut oil

¼ cup agave or raw honey (or Stevia to taste)

3 eggs

1 tbsp. vanilla extract

3 mashed bananas

Combine the wet and the dry ingredients in the large bowl and blend well.

Pour into a glass 9 inch cake pan and bake at 350 F for 35 – 45 minutes, depending on how quickly the cake browns.
