
Ever wonder what you can do with those over-ripe left over bananas? I usually peel them and stick them in the freezer if I don’t have time to do anything with them. But this week, I felt creative and made a dairy free banana pudding. Chia seeds are a complex little seed that has many proven health benefits. Chia seeds slow down the absorption of sugars which is very beneficial for diabetics. They are high in fiber and are packed with Omega 3 fatty acids, trace minerals and protein. Enjoy this pudding for breakfast, snack or dessert. Bon Appétit!
In a large blender or Vitamix add the following ingredients:
4 large or 6 small over ripe bananas
4 cups of almond milk or coconut milk
1 cup chia seeds
2 tsp. vanilla extract
1 tsp. cinnamon
1 tsp. nutmeg
Blend on high for about 1 minute.
Pour into dessert bowls and refrigerate for about 1 hour before serving.
Top with chopped nuts and coconut shavings. Enjoy!
