
This is a raw and gluten free yummy dessert with no added sugars. You can really taste the natural sweetness of the fruit while the crust adds that little crunch. The only preparation is soaking your seeds and dates overnight and making sure you have some ripe, but too soft, bananas. Enjoy as a dessert or breakfast treat. This recipe makes 4 small cups. Bon Appétit!
Soak 1 cup raw sunflower seeds in clean water
In a separate bowl, soak ½ cup dates. Let both of these soak overnight.
The next day, pour off the water and rinse the seeds.
In a food processor add the following:
The soaked sunflower seeds
The dates without the water
2 Tbs. coconut oil
Pulse and blend until the mixture because pasty and clumps into a ball.
Manually pat the seed mixture into small bowls to create the crust.
Clean the processor and blend 3 not-too-ripe bananas with 1 tsp. vanilla and the juice of ½ lemon.
Gently pour the banana mixture into the cups. Sprinkle with nutmeg.
Refrigerate for a few hours for the coconut oil to solidify. Enjoy!
