BBQ Chicken Salad

Simple and tasty salads can be a meal unto themselves. If you like to add protein to your salad, this BBQ Chicken salad is easy and quick. Always choose chicken that is free range, hormone and antibiotic free. If you do a bit of research you can find local farmers that offer chickens and eggs. The difference in the taste is amazing and worth the effort.  Bon Appétit!

Cut up 1-2 chicken breast into small cubes.

Sautee the chicken in coconut oil until done

Lower the heat and add the following ingredients directly to the pan:

½ cup organic Ketchup

1 tsp. Dijon mustard

1 Tbsp. Bragg’s Liquid Aminos or Tamari (fermented soy sauce)

1 Tbsp. lemon juice

1 tsp. garlic powder

Stir gently until most of the liquid evaporates and the sauce is covering the cubes of chicken.

Let cool and top off a salad with the chicken. Enjoy!
