Bison Chili with a French Twist

For those of you who follow the Paleo Diet  or if you are an O blood Type, this simple meal is very nourishing and simple to make.  If you are going to eat red meat occasionally , make sure that it is Grass Fed as well as Hormone and Antibiotic Free.  This is my “French Canadian” twist to the chili since I add about 1/2 cup of red wine. Mmmm good! Bon Appetit!

1 Tbs Grapeseed oil                                   Saute onions and veggies and garlic

1 onion                                                     Add the beef and spices and cook until no

1 cup chopped celery                                 Add the diluted  tomato paste and the wine

1 cup chopped green pepper                       longer pink.

3 cloves garlic                                            Simmer for about 1 hour. 

1 can organic Black Beans                        Serve with an Organic salad and you have a

2 tsp Oregano                                             perfect Grain Free meal.

2 1/2 tsp Chili Powder 

2 1/2 tsp. Cumin

1 tsp sea salt

1 small can organic Tomato Paste

dilute the tomato paste in 1 1/2 cups water

1/2 cup red wine

1 lb. Grass fed Bison or Beef
