Black Bean Burgers

If you like the idea of a “burger” but prefer a vegetarian version that is full of protein and fiber, you will love these Black Bean Burgers. Black beans are also a great source of Thiamin, Magnesium, Phosphorous and Manganese.  Be creative with the burger. You can place it in a gluten free bun, crumble it up and use it in a wrap or cut it up and place it on top of a salad. Either way, the taste and texture are amazing. Bon Appétit!

In a large bowl, mix the following:

¾ cup Almond flour

1 medium onion, chopped up

2 celery stalks, chopped up

2 tsp. chopped garlic

2 cups of organic Black Beans

1 teaspoon salt

1 Tbsp. Cumin

¼ cup fresh chopped parsley

2 Tbs. Cilantro or ¼ cup fresh and chopped

In a separate bowl, whisk 4 organic eggs

Pour the egg mixture into the dry and mix gently

Heat 1-2 Tbs. coconut oil or grapeseed oil. Do not use olive oil since the high heat turns it rancid.

Drop the black bean batter from a large spoon and pat gently to flatten. Cook on medium heat until golden brown on one side and turn over.

Enjoy warm or cold.
