Black Bean Quinoa

Quinoa is classified as a seed, so for those that are conscientious about not eating grains while they are on their healing journey, quinoa is the perfect food. It is high in protein and minerals. I love to experiment with quinoa because it can be enjoyed hot or cold, sweet or salty. I love black beans and the tex-mex flavor so I created this recipe. My husband loved it, so I am sure you will too. Let me know what you think. Bon Appétit!

Cook 1 cup quinoa in 2 cups clean water.

Add the following and gently mix together the following:

1 can of organic Black Beans

3 celery stalks, chopped finely

½ onion, chopped finely

½ cup packed fresh parsley, chopped finely

1 Tbsp. cumin

1Tbsp. dried cilantro

Whisk the following together:

1/3 cup extra virgin olive oil

Juice from 1 organic lemon

2 Tbsp. Bragg’s Liquid Aminos

Pour the olive oil mixture over the quinoa and beans and stir gently. Serve warm or cold. It’s delicious either way. Enjoy!
