Blueberry Flax Bread

Flax is extremely high in fiber and in phyto-estrogens. These plant based estrogens can protect your cells from the overly aggressive environmental estrogens from pesticides, herbicides and plastics.  In fact, a recent study showed that women who had Breast Cancer who ingested 5 Tbs. of flax seeds every day, showed regression in the size of their tumors. Enjoy this bread as a breakfast bread or as a dessert. There are no added sweeteners except for Stevia. If you prefer a sweeter bread, add ¼ cup agave or honey. Bon Appétit!

In a large bowl, add the following dry ingredients:

2 cups freshly ground flax seeds

2 cups almond flour

2 cups fresh or frozen Blueberries

2 tsps. Cinnamon

1 tsp. nutmeg

2 tsps. aluminum-free Baking powder

1 tsp. salt

1-2 tsps. Stevia or sweetener of choice

1 cup sunflower seeds

In a separate bowl whisk the following:

2 cups almond milk

6 organic eggs

2/3 cups slowly melted coconut oil

Pour the wet ingredients into the dry ingredients and mix gently.

Pour into 2 oiled glass loaf dishes.

Bake at 350 F for about 40 minutes or until the center is dry. Watch it carefully the last 10 minutes. Enjoy!
