Chicken and Kale

If you are looking for a quick meal that is packed with flavor and nutrition, this is it. Some people find raw kale a little chewy and fibrous. But when you lightly sautée it with coconut oil, for just a few minutes, it keeps all its nutritional value and adds a delicate flavor to any dish. Bon Appetit!

Slice 3 organic chicken breasts into thin slices

Sautée the chicken in 1 Tbsp. of raw, unrefined coconut oil

Sprinkle with a little Himalayan crystal salt or sea salt

Remove the chicken when done.

Add 1 sliced onion, 3 crushed garlic cloves and 1 cup of sliced mushrooms

Sautée until the onion is soft.

Add 3 cups of chopped organic kale and stir until the kale barely softens.

Stir in the chicken and voilà, you have your warm dinner. Serve with a salad and enjoy!
