
It is that time of year again where soups and warm foods just feel right. But can you still have a “raw” soup that is warm? Absolutely. I had extra celery in the fridge after a few days of juicing so I thought I would put it to good use. Celery is one of those very versatile foods that adds flavor and it also has many beneficial properties. It has anti-inflammatory properties and helps to flush out the kidneys. It has many anti-cancer benefits by quenching free-radicals, blocking hormones that encourage the growth of cancer cells and even prevents cancer cells from spreading. Enjoy this rich and warm soup. In a large pot, add the following:
½ stick of grass fed, pasture raised butter (it’s actually good for you)
1 onion chopped
1 head of celery, chopped
Sauté gently, just enough to warm the vegetables all the way through.
Add the following:
1 Tbsp. dried dill or ¼ cup fresh dill
2 cups of organic chicken broth
1 cup of almond milk
Stir gently just enough to warm the soup.
Drain the soup into a Vita-Mix of high powered blender and blend until smooth. Top with fresh dill or powdered sea weed. Serve as an appetizer or as a meal. Enjoy.
