Raw soups are very satisfying, especially when you may be tired of green smoothies all the time. The warmth of the soup reminds you of soups that have simmered for hours, yet it provides the nourishment and the enzymes of raw veggies. You can choose to use water as a base or organic chicken broth, whatever your nutritional conscious allows. Bon Appétit!
In your Vitamix, add the following:
2 large handfuls of spinach
2 carrots, chopped
6 celery stalks
1 handful of parsley
1 tsp. garlic or 1-2 garlic cloves
Warm the water or broth on the stove, gently heating and not boiling. Pour over the veggies and blend on high for a few minutes.
Sprinkle your favorite spices and Himalayan salt for flavor.
This makes enough for 4 large bowls. Enjoy!
