At first crunch, you will be hooked on this lavish and delicious cruciferous [1] crunch salad that is overflowing with cancer-fighting ingredients! It is the perfect blend of veggies, seeds, and grapes that will keep you full and energized for hours.
Ingredients:
- 2 heads broccoli
- 3 English cucumbers
- 1-2 cups purple grapes
- 1 red onion
- 1 cup GMO-free sunflower seeds (or pumpkin seeds)
- 1/2 cup organic, healthy oil, dairy-free ranch (I used Primal Kitchen Ranch [2] with avocado oil)
- 1/4 cup balsamic vinegar
- Garlic salt to taste
- Pepper to taste
Directions:
- Dice broccoli heads, English cucumbers, and red onion into fine, bite sizes
- Cut grapes into halves
- Put cut veggies and grapes in a large mixing bowl
- Mix vinegar, ranch, salt, and pepper into a separate bowl and adjust to taste (add more ranch if you want creamier, more vinegar if you want more tart)
- Pour dressing over vegetables and grapes and add sunflower seeds. Mix well and allow to marinate in the refrigerator for about 30 minutes
