Crusted Baked Cod

Atlantic Cod is a deep water fish that is imported from Iceland and the North East Arctic. According to Seafood Watch, the fisheries in these regions are well managed and populations of fish are increasing. Cod is very high in tryptophan, selenium, omega 3 fats and is low in mercury and other pollutants. This recipe gives the cod a bit of a crunch and added flavor. Serve with a salad and steamed veggies and you have a very satisfying and nutritious meal. Bon Appétit!
Preheat the oven to 375 F.
While the oven is heating, prepare the topping.
Using a rolling pin or a food processor, grind ½ cup of dry, sprouted, gluten-free bread crumbs.
Add the following to the bread crumbs and stir gently:
2 tsps. crushed garlic
2 tbsp. Olive oil
½ cup grapeseed oil or olive oil mayo
1 tbsp. lemon juice
1 tbsp. tarragon
Pinch of salt
Spread and pat the bread crumb topping over the fish. Bake for about 15-20 minutes or until fish is flaky. Enjoy!
