
The idea for this salad came from the salad bar at Whole Foods. It looked pretty and was made with cruciferous veggies so I thought I would try it at home. Cruciferous vegetables truly are Nature’s detox miracle since they are high in Sulforaphane which increases your glutathione levels. Glutathione is a primary anti-oxidant that keeps your cells clean. Cruciferous veggies also help the liver with Phase II detoxification, which often gets bogged down because of all the chemicals we are exposed to. It’s simple, quick to make and quite tasty. In a food processor add the following:
3 cups of organic Broccoli
3 cups of organic Cauliflower
Pulse until finely chopped. Place in a large bowl.
Next, add the following to the processor and chop:
2 cups organic parsley
2 celery sticks
1 clove of garlic
Add this to the bowl and mix.
Dressing:
1 cup grapeseed oil mayonnaise
1 tablespoon raw apple cider vinegar
Juice of 1 lemon
Himalayan Crystal salt to taste
A few drops of Lemon Stevia
Pour into bowl and mix.
Serve with sunflower seeds or other raw, soaked nuts.

One question i have since a while : Soaked nuts and grains loose all their taste ; If one first soaks them and then dries them again in the oven ; is that ok???
Yes, soaking will let them sprout, increasing their nutrition and digestibility. Drying them will make them even yummier!
