Deviled Eggs’ Without The Eggs

Are you on an egg-free diet? Do you miss deviled eggs? Or just want a new snack mixture to put on crackers or a sandwich?! Then this is your recipe!

This recipe contains simple ingredients you probably already have in your kitchen. Deviled eggs made from chickpeas. Chickpeas can be a good source of protein, calcium, potassium, fiber, selenium, and iron. One cup of chickpeas contains 69.7 mg of choline, which helps with brain and nervous system function. Choline plays a role in mood, muscle control, learning, and memory, as well as the body’s metabolism.

Ingredients:

1 can organic garbanzo beans or 1 1/2 cups cooked garbanzo beans (chickpeas)

1 tbsp white wine vinegar

2 tbsp water

1 tbsp nutritional yeast

2 tbsp olive oil

1 tsp Dijon mustard

Himalayan sea salt to taste

3 tbsp yellow onion or shallot, minced

Directions

Place all the ingredients except the onions in a small food processor and blend until smooth. Add in the minced onions and pulse for just a few seconds to get them mixed in.

You can add the mixture to your favorite salad, low-carb crackers, sliced raw vegetables, or make a sandwich! I topped mine with paprika and greens onions.
