Broccoli Slaw

A nice change from the regular coleslaw is Broccoli slaw. You can purchase the organic slaw from the grocery store and it already has a few carrot slices in it. I always like to add more carrots, broccoli flowerets, nuts and even a few cranberries. Broccoli is a cruciferous vegetable high in Vitamin C, K, A and even a small amount of Omega 3’s. Broccoli also contains Sulforaphane which has powerful anti-cancer properties. Bon Appétit!

In a large bowl add the following:

1 package organic broccoli slaw

2 carrots grated or chopped finely

2 cups of broccoli flowerets

1 cup raw sunflower seeds

The dressing:

½ cup grapeseed mayonnaise (do not use mayo made from canola or soy oil)

2 Tbs. raw apple cider vinegar

½ -1 packet of Stevia (if you like to sweeten it up a bit)

1 tsp. garlic

1 Tbs. basil

Himalayan salt to your taste

Red pepper if you like the hotter version

Whisk the dressing thoroughly and pour over slaw. Mix thoroughly and enjoy.

 

  • I can buy the Organic broccoli slaw at Trader Joe’s. I make it in a similar way to your recipe. I also add a small amount of chopped organic dried cranberries, and celery seed. I omit the stevia and add about 2 tsp of dried mustard to the vinegar. I haven’t tried it with garlic and basil. I use tons of fresh organic parsley in everything. This is so tasty!
