Double Chocolate Zucchini Loaf

Did you know chocolate [1] is a good source of magnesium and antioxidants?! It’s true! This treat has vanilla bone broth powder and zucchini in it for extra nutrients.

Ingredients:

2 cups (packed) non-gmo, organic zucchini, shredded

1.5 cups almond flour

1/2 cup raw cocoa powder

1/4 cup bone broth protein powder (I used vanilla) plain or chocolate also will work.

1/2 tsp salt

1/2 tsp baking soda

1 tsp baking powder

3/4 cup Lilly chocolate chips

1/4 cup organic yogurt (I used plain coconut yogurt)

3 eggs

1-2 tsp stevia

2 tsp vanilla extract

3-4 tbsp olive oil

Mix the wet ingredients in a bowl with a hand mixer (eggs, yogurt, olive oil, stevia)

Next mix the dry ingredients in a bowl then combine the wet and the dry together with a spatula. *Don’t mix the zucchini in until last.

Lastly, fold in the zucchini and ½ the chocolate chips. Save the other half for the top.

Line a small bread dish with parchment paper. Pour mixture into a small bread baking dish. Bake at 350 for 55 minutes.
