
I am so excited that I discovered this recipe! I love having a warm biscuit for breakfast or with a soups and stews. I had searched and experimented with a few recipes but they were either tasteless, too hard or flat. These biscuits are delicious! I encourage my coaching clients to avoid grains because of the increased sugar load that they want to avoid as they are healing their bodies. But I also want them to look forward to eating food that will build up their body and spirit. Food can be comforting at times. I hope you enjoy these guilt-free biscuits. Bon Appetit! Â
2 1/2 cups almond flour
1 tsp baking soda
1/2 tsp sea salt
1 tbsp. Xylitol or stevia to taste.Â
juice from 1/2 lemon
1/4 cup coconut oil
2 large eggs
Combine the dry ingredients in a large bowl.
Slowly melt the coconut oil.Â
Beat the Xylitol or stevia with the eggs, lemon juice and the coconut oil
Pour into the bowl with the dry ingredients and gently stir.
Drop by large spoonful unto a baking sheet lined with parchment paper
Bake at 350 F for 15 – 20 minutes until golden brown on the top.
Serve warm with organic pasture-raised butter .

To get a more alkaline, cancer risk free biscuit, cut the eggs. Use “egg replacer,” or bananas.
I can’t do eggs so I make flax eggs to replace the eggs in baked goods.
1 tbsp ground flax to 3 tbsp water. Let sit in refrigerator for 10 minutes, until a gel forms. Adds fiber and holds the dough together just like eggs.
When you use stevia, do you use liquid or powder?
I prefer the drops. I also use Stevia Glycerite – it’s a little thicker and more concentrated
