Easy Artichoke Chicken Casserole

This is a simple and nutritious casserole that you can prepare ahead of time or freeze for a quick meal. Make sure you choose organic chicken that is antibiotic and hormone free. Cage free is also preferred if you can find local farmers. The onion dip adds a rich flavor without having to add too many spices. If you want to top with raw, hormone free cheese as an extra topping, it adds a rich flavor. Bon Appétit!

Cube 4 chicken breasts and sauté in 2 Tbs. coconut oil

In an oiled casserole dish layer the chicken and 1 can of quartered artichoke hearts.

In a medium sauce pan, melt 1/3 cup butter or coconut oil

Add ¼ cup dry white wine, 1 package of Simple Organic Onion Soup Mix and 3 Tbs. Rice flour. Stir until it thickens.

Pour over chicken and artichokes.

In a small bowl , add 1 cup bread crumbs, 1 tsp. dried thyme. Sprinkle over chicken. If you want to cover with cheese, do so now.

Bake in oven at 350 F until bubbly, about 20-25 minutes.
