Egg Free Caesar Dressing

Caesar salads are light and crispy and are a great addition to any meal. Many of the Caesar dressings are made with raw eggs, which is not a food that I can stomach in the raw state. (Too many childhood memories of raw eggnogs before Catholic Mass. HaHa) So I decided to create my own, using healthy ingredients that support a healing journey. Bragg’s Nutritional Yeast has a cheesy flavor and is full of B vitamins. (It does NOT promote candida in the body) This salad is fast and simple and I must say, scrumptious!! Bon Appétit!

With purified water, rinse and soak 3 heads or organic Romaine Lettuce. Dry off the lettuce with one of those fancy spinning salad bowls or simply pat dry with a clean towel.

Break up or cut up the lettuce into large chunks and place in a large bowl for mixing.

In a blender, place the following:

1 clove garlic (or 1 tsp. crushed garlic)

Juice of 1 lemon

1 tsp. Bragg’s Liquid Aminos

1 tsp. Dijon mustard

½ cup Bragg’s Nutritional Yeast (or if you are OK with occasional dairy, use ½ cup grated Parmesan cheese)

1/3 cup Extra Virgin Olive Oil

Blend at high speed for a minute and pour into a glass measuring cup.

Slowly add a bit of the dressing to the salad and mix. Taste test to see how much dressing you want on your salad. (I ended up using all of the dressing.)

Top with raw sunflower seeds and salt and pepper to taste. Enjoy!
