Ginger Chicken with Asparagus

I love ginger for its medicinal qualities and taste. Ginger is actually known as one of the healthiest foods on the planet. Ginger stimulates digestion, clears up the lymph and is a powerful anti-inflammatory food. Asparagus is a rich source of glutathione which helps break down carcinogens and stimulates liver detoxification. Add these with a bit of protein and you have a well-balanced meal. Bon Appétit!

Cut up 2 chicken breasts into cubes. Sprinkle brown rice flour over the cubes.

Sautee the chicken with 1 Tbsp. coconut oil or grape seed oil until done. Set the chicken aside.

Add the following to the same pan:

1 lb. of asparagus, cut up into smaller pieces.

1 onion, chopped

2 cups of button mushrooms or shitake mushrooms.

Sautee lightly.

In a small bowl add the following:

1 cup chicken stock

2 tbsps. brown rice flour

2 Tbsp. Bragg’s Liquid Aminos

2 Tbsp. honey or stevia to taste

2 tsps. fresh ginger or 1 tsp. powdered ginger

2 tsps. crushed garlic

¼ tsp. cayenne

Add the broth to the pan and bring to a gentle boil until it thickens. Lower the heat and add the chicken.

Add 2 cups of arugula and heat until barely wilted.

Serve as a main course. Enjoy.
