Gluten Free Biscotti

Do you love crunching on a biscotti but feel guilty because of all the sugar and wheat ingredients? Well here comes a healthy biscotti to the rescue!  You can add a variety of nuts or dried fruit. I had to experiment a few times with the ingredients and I can’t say that I have perfected them, but they certainly satisfied my palate. Bon Appétit!

½ cup water with 4 Tbsp. Xylitol

¼ cup grapeseed oil

1 Tbsp organic Vanilla extract

3 organic eggs

With a whisk, beat the liquid for a minute or 2

In a separate bowl mix:

4 cups almond flour

1 tsp baking soda

½ tsp sea salt

1 tsp cinnamon

½ tsp nutmeg

½ cup of your favorite nuts

½ cup raisins or cranberries

½ cup organic chocolate chips

Add the liquid and stir gently until a dough ball forms.

You may need to add more flour, depending on the consistency

Separate the ball in 2 and make 2 separate logs on a baking sheet

Bake for 25 – 30 minutes at 350 F

Let them cool for about 1 hour then slice with a serrated knife.

Bake for an additional 5 minutes and flip the biscotti. Repeat.

Be careful not to over bake.
