Goat Cheese Stuffed Dates

This is a very simple and easy treat that you can serve as a snack, hors d’oeuvre or a dessert. Although the dates are high in natural sugars they are packed with important minerals like potassium and selenium.  Dates are also very high in fiber and B vitamins. When you include the goat cheese in the date, you are adding a great source of easily digestible protein.  You can use plain goat cheese and add your own herbs and flavors. If you are in a time crunch, you can purchase goat cheese that is already flavored with herbs.  Top with your favorite nut or enjoy plain. Either way, this is a nutritious way to satisfy that occasional desire for something sweet with “Nature’s Candy”.  Bon Appétit!

You can prepare a dozen or more at a time.

Split each date down the center and spread it open.

Add 1 tsp. of goat cheese and spread into the date.

Top with your favorite nut or enjoy plain.

Refrigerate or enjoy at room temperature.
