
This is a simple recipe that is bursting with flavor. If you like to enjoy a piece of “bread” on occasion but you are avoiding grains, this bread will satisfy those cravings. Because it is made with almond flour, it is loaded with minerals and fiber. The flax adds a bit of crunch and texture to the bread. If you like a heavier, coarser bread, you can use whole almond flour versus blanched almond flour. Bon Appétit!!
In a large bowl add the following:
2 cups almond flour
¼ cup ground flax seed
2 tsp. baking soda
1 tsp. salt
In another bowl whisk the following ingredients until well blended:
1 Tbs. agave or sweetener of choice
Juice of 1 lemon
4 eggs
¼ cup coconut oil or grapeseed oil
Mix the wet with the dry ingredients and stir gently.
Pour into an oiled glass loaf pan
Bake at 325 F for about 20-25 minutes or until well done in the center
Serve warm with butter with a meal or enjoy for breakfast with unsweetened apple butter. Enjoy!
