
I used to love a crunchy granola for breakfast or snack, but eventually recognized that so many of them were just full of sugar producing grains. I decided to experiment and try to make one without the oats and rice puffs so I could enjoy that crunchy goodness once again. I did use 1/8 cup of raw organic honey to give it a bit of sweetness, but you could eliminate it and use stevia or nothing at all. The raisins add a touch of sweetness as well. The flax and the nuts are excellent sources of fiber and powerful nutrition. Mix and match with your favorite nuts and dried fruit. Bon Appétit!!
Combine these in a large bowl:
1 cup uncooked quinoa
1 cup slivered almonds
½ cup sunflower seeds
½ flax seeds
¾ cup raisins or cut up dried fruit
In a small pot, slowly melt 3 Tbs. coconut oil
Add the following to the oil:
1/8 cup honey or Stevia to your preferred seetness
1 tsp. cinnamon
1 tsp. vanilla
Slowly pour this over the seed/nut mixture and mix until the seeds are well coated.
If you have a dehydrator, spread on a sheet and “bake” for 10-12 hours
If you do not have a dehydrator, bake in an oiled glass dish, slowly at your lowest temperature (usually 175 F) for 60 – 90 minutes, depending how crunchy you would like it.
Serve with your favorite nut milk or eat plain as a snack. Enjoy!
