Grain Free Quinoa Pancakes

If you like to splurge a bit on weekends with a healthy brunch, these pancakes made with Quinoa are perfect. I experimented a few times and I think I perfected the recipe. These pancakes are easy to make, are light and are grain free. You can choose to add Stevia in the batter to sweeten them up or if you really want to splurge, you can add a little organic maple syrup.  Email me and tell me what you think.  Bon Appétit!

3 eggs

1 cup cooked quinoa

1 tsp. cinnamon

½ tsp. nutmeg

½ tsp. salt

1 tsp. baking soda

Add the spices to the eggs and whisk for 1 minute.

Add the salt and soda to the quinoa and add the egg mixture.

Mix thoroughly until well blended.

Melt 1 Tbsp. coconut oil to a pan and heat moderately.

Drop batter from a large spoon and slowly cook. Once the bubbles on the batter open up on the top side, gently flip. It should be a gentle golden brown. Cook for a minute or 2 and voilà…you have delicious and nutritious grain free pancakes.

  • Hi! Do you suppose I can substitute egg whites for the whole eggs and Xylitol for the Stevia and they would still turn out okay? How much Stevia or Xylitol should I use with this recipe and how many pancakes does this recipe make? Thanks.

    • I am not sure about the egg whites. As far as the Stevia versus xylitol, it really is a matter of preference. Taste the batter to see if it is sweet enough for you. This recipe made 8 medium sized pancakes. Glad you are enjoying the Delectable Dishes!
