Each herb in this Greek Chicken Meatball bowl is strategically chosen for flavor and healing properties. We also swapped the rice for cauliflower rice since cauliflower is a cruciferous powerhouse healing vegetable [1].

Ingredients:
- 1 lb lean ground chicken
- 1/4 cup white or yellow onion, grated
- 2 cloves garlic, minced
- 3 tablespoons fresh parsley, finely chopped
- zest of 1/2 lemon
- 1 teaspoon dried oregano [2]
- 1/2 teaspoon ground coriander
- 1/2 teaspoon cumin [3]
- 1 generous pinch salt and pepper, each
- 1 large egg
- 1 head of Cauliflower Riced – or 1 bag of frozen riced Cauliflower
- Tzatziki (optional to top)
- Sliced baby tomatoes (optional to top)
- Kalamata olives (optional to top)
- Sliced cucumbers (optional to top)
Directions:
- Preheat oven to 400 F and line a baking sheet with parchment paper
- Combine the chicken, onion, garlic, parsley, lemon zest, oregano, coriander, cumin, salt and pepper, and egg in a large bowl and mix to combine
- Make your meatballs by rolling 1 tbsp of chicken mixture in your hands to form a ball, line the baking sheet with meatballs
- Bake in the oven for 12-15 minutes
- While meatballs are baking heat up your cauliflower rice in skillet on the stovetop, season as wanted
- Make your bowls with cauliflower on the bottom and a few meatballs on top with toppings of your choice, enjoy!
