Greek Salad

A traditional Greek salad, if properly served, can be a pleasant addition to any meal. The tangy Kalamata Olives do provide a source of iron and healthy oils. The down side is that they are high in sodium, so use them sparingly. You can replace the feta cheese with goat cheese for a different flavor. After putting all the ingredients together, let sit in the refrigerator to keep very cold before serving. Pour the dressing right before serving. You can serve plain or with baked salmon or grilled chicken. Bon Appétit!

1 large head of Romaine Lettuce, rinse and chopped

1 small red onion, thinly sliced

½ cup pitted Kalamata olives

1 ripe tomato, chopped

A few sprigs of parsley

Combine all of the above in large bowl or in individual bowls

Sprinkle crumbled goat cheese

Dressing:

Juice of 2 lemons

10 Tbs. Olive Oil

1 tsp. Oregano

1 tsp. minced garlic

Stevia to taste

Whisk and pour over salad when ready to serve. Enjoy.
