Ingredients:

Dressing

• Juice of 2 lemons
• 4 garlic cloves
• 1/3 cup olive oil
• 1 large bunch fresh dill
• 1 large bunch fresh parsley
• 3-4 Scallions
• 1 tsp garlic powder
• 1/4 cup nutritional yeast (or more to taste)
• 1/4 cup raw, unsalted cashews
• 1 tsp salt
• 1/4 tsp black pepper

Cauliflower

• Large head of cauliflower, chopped into florets
• Avocado oil 
• Salt
• pepper

Directions:

• Add all of the dressing ingredients to a high-powered blender and blend until smooth, adjusting seasonings to taste, set aside
• Mix cauliflower in a bowl with oil and cook in an air fryer (or convection oven) at 400 degrees for 20-30 minutes until crisp
• Remove cauliflower from the oven and toss it in a bowl with the dressing, enjoy!
