
Do you enjoy chicken salad but want to avoid all the unhealthy ingredients that typically are added to them? Regular mayonnaise may contain toxic ingredients like high fructose corn syrup, emulsifiers and thickeners, chemical flavor enhancers and soybean or canola oil.  You can make your own mayo, which is very simple, or you can buy a healthy store bought brand that is made with olive oil or grapeseed oil.  This simple recipe is perfect for lunch or a quick meal on the go. Cut up 2 chicken breasts or a package of thigh meat into small cubes.
Place in a pan with 1 Tbs. coconut oil.
Sprinkle salt, cumin and red pepper over the chicken.
Gently stir fry until well done.
Remove from pan, place in a large bowl and let cool.
Once the chicken is cool, add the following ingredients:
1 cup finely chopped celery
¼ cup finely chopped green onions
1 clove garlic, crushed
1 cup grapes, sliced in half
½ to 1 cup mayo, depending on how much mayo you prefer
Gently mix thoroughly
Place on romaine lettuce leaves and top with nuts.
Serve with flax crackers or enjoy plain with the lettuce. Enjoy!
