
Kale is classified a super-food because it is at the top of the ANDI score list with a whopping 1000 points. ANDI stands for Aggregate Nutrient Dense Food, based on Dr. Joel Furhman, MD. Dr. Furhman developed this scoring system to rank foods according to their micronutrients. Although Kale can be a little tough and chewy, I found this recipe,  shared by my tennis buddy Martha, to be very delightful.  Bon Appétit!
To make a salad for 2, use 1 head of organic kale and chop finely.
To garnish the kale you can add shredded organic carrots, green apple and your favorite organic raw nuts.
Dressing:
3 Tbsp. Lemon juice
2 Tbsp. Olive Oil
2 Tbsp. Grapeseed or Olive Oil Mayo
2 Tbsp. Dijon Mustard
Whisk the liquid ingredients and pour over the salad. Toss lightly and enjoy!
Lacinata and Russian red kale work great for this recipe as they have a finer/ more delicate leaf. great recipe. and pine nuts work really well in this also. thanks for sharing
