This pesto is so yummy that you can spread it on crackers and raw veggies. The zest of the lemon and the sweetness of the basil are a perfect blend. Olive oil and lemon juice make a perfect combination to stimulate your liver and gall bladder. The zucchini adds fiber and crunch. You can serve this as a main dish or a side salad. Bon Appétit!
In a food processor add the following:
1 cup of soaked almonds
1 Tbs. of grated lemon peel
2 Tbs. fresh basil (about 8- 10 leaves)
1-2 garlic cloves, chopped
½ tsp. Himalayan salt
Pulse the ingredients until it is a fine powder
While the processor is on, slowly drizzle:
Juice from ½ lemon
½ cup extra virgin olive oil
If the mixture is too thick, add more oil.
Spiralize a zucchini and add the pesto. Mix well and top with sunflower seeds. Serve immediately. Enjoy!!
