These keto style matcha coconut butter cookies are easy to throw together and keep on hand for a healthy treat. They are packed with healthy fats, fiber, phytonutrients, and other essential nutrients

The researchers found that Matcha green tea contained up to 137 times more EGCG than regular green tea. Matcha [2] can boost the immune system, suppress inflammation, and can cause breast cancer cells to die.

Ingredients:
3 tbsp coconut flour
1/2 cup coconut butter
1 tbsp coconut oil
2 flax eggs ( 2 tbsp ground flaxseed+2 tbsp filtered water)
1 tbsp Matcha
1/4 cup coconut milk, full fat
1-2 tbsp stevia powder or 2-4 tsp liquid stevia (I used 1 tbsp of powdered stevia and they were lightly sweetened to perfection)
1 scoop grass-fed gelatin, optional
Directions:
Mix the flax eggs together and set aside. Next mix all the ingredients except the flax eggs. Mix well then add flax eggs and mix. Makes about 8 cookies
Bake at 350 for 7-8 minutes
Topped with coconut butter.
