Mini apple pies that are guilt-free!! These little cups are grain-free (of course) and sugar-free (of course). You can enjoy these for dessert or even breakfast. They contain protein, healthy fats, vitamins, and minerals. Apples are a major source of dietary phytochemicals and possess potent antioxidant activity and anti-proliferative activity in laboratory settings. A study conducted by Cornell University found that apple extracts significantly inhibited Breast Cancer [1] cell growth. These little apple pies are great for the cooler months! Serve warm with homemade coconut whipped cream.
Ingredients:
Piecrust:
2 cups Almond Flour
1 egg organic cage-free
1 tsp baking powder
pinch of salt
1 tbsp coconut oil
1 tsp cinnamon
Preheat oven 350 degrees
Mix all ingredients together. Fill muffin tins with liners. Fill each muffin tin evenly and form a bowl shape for the filling. (About 2 tbsp of crust filling for each) bake for 10 minutes.
Filling:
2 Large Organic Apples, chopped
½ lemon juiced
1 tbsp coconut oil
Mix all ingredients together and fill the crust. Bake for 5-7 minutes until the apples are just softened.
Topped with stevia-sweetened homemade coconut whipped cream.
