Mixed Bean Salad

Bean salads are a nice change from a regular green salad. You can add variety by changing the dressing and adding various nuts and veggies. This mixed bean salad is high in protein, fiber, folate (B9), magnesium, manganese and phosphorous. It is very filling and nourishing. Bon Appétit!

1 can organic black beans

1 can organic garbanzo beans

Drain and rinse the beans and drop into a large bowl.

Chop up the following into small pieces:

3 celery stalks

1 carrot

½ green pepper

½ red pepper

3 green onions

1 cup broccoli flowerets

2 Tbs. fresh dill

1 clove garlic, crushed

Add to the bean mixture.

In a separate small bowl, whisk the following together to make the dressing:

1 cup mayonnaise

2 Tbsp. raw apple cider vinegar

½ packet of stevia

½ tsp. cayenne

Any other of your favorite spices

Pour over beans and veggies and gently mix.
