Nutty Flax Bread

Flax is extremely beneficial because it is considered a phyto-estrogen, which is basically a plant estrogen. This is beneficial for ALL women, even if they are on a healing journey with Breast Cancer. Plant estrogens from Flax seeds have been shown to regress Breast Cancer. Simply adding 5 Tablespoons of Flax every day can have a huge impact on your health.  This recipe is higher in protein than plain Flax Bread because of the added Quinoa flour. Bon Appétit!

In a large bowl, add the following and mix gently:

2 cups Flax seed meal

2 cups Quinoa flour

2 tsps. cinnamon

1 tsp. nutmeg

2 tsps. salt

1 Tbsp. aluminum free baking powder

4 Tbs. Xylitol or 2 tsp. stevia (add more if you would like a sweeter bread)

1½ cups raisins

1 ½ cups raw sunflower seeds or your favorite chopped up nut

In a smaller bowl, whisk the following:

1½ cups unsweetened almond milk

7 organic eggs

2/3 cup grapeseed oil or coconut oil

Pour the wet ingredients into the dry and mix gently. If the batter is too thick, add more almond milk.

Pour batter into 2 oiled glass breads dishes. Bake at 350 F for about 20 minutes or until the center is done. Enjoy plain with organic butter or unsweetened apple butter.
