Organic Black Bean Pasta

If you love pasta but want to avoid the carbs, this pasta is amazing. I like Quinoa pasta, but this black bean pasta is very different. It has a rich texture and a very distinct flavor which adds richness to the meal. You can order Explore Asian Organic Black Bean Pasta through Amazon at a very reasonable price. Simply sauté garlic and veggies in olive oil to enjoy with the pasta or you can follow my favorite tomato sauce recipe. Bon Appétit!

In a large sauce pan, sautée the following:

2 tsps. crushed garlic

1 chopped onion

1 cup chopped celery

1 red or green bell pepper

1 zucchini, sliced in quarters

1 cup mushrooms

Sautee until onion is clear, then add 1 large BPA free can of Organic Crushed Tomatoes. Stir in gently and lower heat.

Add your favorite Italian spices such as oregano, basil and thyme.

If you want to add grass fed ground beef, simply cook the meat in a separate pan and add it to the tomato sauce.

Let the sauce simmer for about 45 minutes on low heat, stirring occasionally.

Bring a large pot of water to a boil. Add a few tbs. of olive oil to keep the noodles from sticking. Boil the noodles until done and drain the water. Rinse the noodles with cold water.

Scoop the pasta into a bowl and add the tomato sauce. This is a very hearty meal because of the protein and fiber in the black beans. Enjoy!

  • There are NO black beans in your recipe!!! You mention them but then you mention boiling pasta. I’m totally confused!
