
Cool winter months call for warmer, denser foods. Chili is always a simple but complete meal that is delightful in the cool winter months. For some that prefer not to use red meat, this chili is perfect. Clean, farm raised turkey is easy to digest and is very high in tryptophan and protein. The veggies and spices are a perfect combination. Serve with a salad or almond biscuits. Bon Appétit!
This recipe serves 4 with plenty of leftovers to freeze.
In a large pot, add the following:
2 tablespoons coconut oil
1 large onion, chopped
3 tsps. crushed garlic
3 celery stalks, chopped
2 cups of sliced mushrooms
1 red pepper, chopped
2 tomatoes, chopped
Sautee until soft.
Add 2 pounds of farm-raised, organic, ground turkey meat and stir gently.
Add the following spices:
3 tbsps. Chili powder
1 tbsp. oregano
1 tbsp. cumin
1 tsp. salt or to taste
Dissolve 1 small can of tomato paste in 1 cup of red wine. (You can omit the wine and use water if you prefer)
Add the tomato paste mixture to the chili and cook on low for about 60-90 minutes, stirring frequently. Enjoy!
