
Cruciferous vegetables are excellent vegetables for supporting the detoxification of the liver and metabolizing estrogens. I have had a few emails about the “goitrogenic” effect of broccoli and other cruciferous vegetables. I don’t believe that is an issue, IF you have sufficient Iodine stores in your body and your thyroid is healthy. This recipe is quick and easy and makes a perfect side dish for any meal. Bon Appétit!
In a food processor, add the following:
2 celery stalks, chopped
¼ onion, chopped
2 cups broccoli flowerettes
2 cups cauliflower flowerettes
1 teaspoon crushed garlic
Pulse the ingredients until finely chopped.
In a stir-fry pan, melt 1-2 Tbsp. coconut oil. Add the vegetables and continuously stir for about 2 minutes, just enough to slightly heat the vegetables.
Add a few teaspoons of organic, pasture-raised butter and salt tot taste. Enjoy!
