Quick Cucumber Salad

This is a very light but very nutritious salad. Radishes are part of the cruciferous family which helps improve liver detoxification. Cucumbers are a good source of Vitamin C, K and Potassium. The water content of cucumbers is very supportive for the kidneys. If you have a food processor or a slicer, you can put this salad together in just a few minutes. Bon Appétit!

With your food processor, slice the following:

1 organic green apple

1organic cucumber with the peel

16 organic radishes

Pour into a medium sized bowl

In a separate bowl, whisk the following:

3 Tbsp. Extra Virgin Cold Pressed Olive Oil

3 Tbsp. raw Apple Cider Vinegar

1 Tbsp. Dijon mustard

10 drops of lemon Stevia

Add the dressing to the cucumber mixture and stir.

Let sit in refrigerator for about 30 minutes for flavors to soak in.

Enjoy.
