
During the colder months of the year, it seems to feel better to eat warmer foods. Years ago I followed the Macrobiotics Diet and enjoyed balancing my foods. Yin, for example, is cold and contracted (winter months) and therefore more yang food (warm food) helps the body to adjust to the temperature change. This casserole is quick and easy and provides a warm touch to any meal or salad. (This does have a bit of dairy in it, so if you are completely dairy free, this recipe is not for you.) Green beans are very low on the glycemic scale and are high in Vitamin K, calcium, magnesium and phosphorous. Bon Appétit!
In a large sauce pan add the following:
2 tbs. butter
1 large onion, chopped
1 cup of mushrooms
6 cups of green beans, cut into 2 inch pieces
Sautee until the green beans are barely starting to soften
In a separate bowl add the following and mix thoroughly:
2 packets of Simply Organic Alfredo Sauce
2 ½ cups of almond milk
Add to the green bean mixture and stir gently until it begins to thicken.
Pour the green bean mixture into a casserole dish and bake at 325 for about 20 minutes.
You can sprinkle with organic parmesan or Brewer’s Yeast for additional flavor.  Enjoy!
