
Black Beans are a great source of protein and fiber. They are also loaded with minerals like magnesium and manganese. I have tasted black bean dips that were very flavorful but they were full of unhealthy fats and dairy, so I thought I would create my own version. You can serve it warm or cold with Non GMO corn chips or vegetable sticks like celery and carrot. This recipe creates a very generous portion that will feed 6-8 people as an appetizer. Bon Appétit!
Add the following to a food processor:
2 cups organic Black Beans
1 cup organic salsa
1 Tbs. olive oil
1 Roma tomato
1 tbsp. dry cilantro or ¼ cup fresh
1 tbsp. cumin
1 tsp. chili powder
The juice for 1 or 2 limes, depending on how thick you want the dip
Himalayan salt to taste
Pulse the processor until all the beans are well chopped.
If you like a warm dip, simply place mixture in a pot and heat very slowly. Stir repeatedly to prevent sticking. Enjoy!
