Quinoa Pasta and Veggies

For you pasta lovers that are looking for a healthy alternative to wheat pasta, this is it! I was so excited when I discovered this macaroni pasta and spaghetti past. The quinoa is high in protein and fiber and is grain free. You can add whatever vegetables you enjoy to this recipe. For the Paleo and O blood types, add some ground venison, bison, grass fed beef or turkey. My daughter called this version a “healthy hamburger helper”. HaHa. Bon Appétit!

Sautee the following in grapeseed oil or coconut oil until soft:

1 large onion, sliced

2 cloves garlic

2 zucchini, sliced in quarters

3 celery stalks, sliced

2 cups mushrooms, chopped up

1 red bell pepper

2 organic tomatoes

Add 2 cups tomato paste or sauce, whatever your preference

Add pinch of salt and 1 Tbsp. Italian spices

Simmer for about 10 minutes.

In a separate pan, cook the ground meat in 1 Tbs. grapeseed oil.

Boil the Quinoa pasta. Drain when soft and drizzle 1 Tbsp. olive oil over the pasta

Mix all the ingredients together.

Serve with a fresh green salad and you have a balanced and healthy meal.
