
Quinoa is a super seed that is very high in protein and minerals. It is not a grain and therefore does not contribute to increased sugar load. I used to bake this loaf with millet 30 years ago, in my vegetarian “hippie days”. Serve as a side dish or as a main course with veggies. Bon Appétit!
Boil 1 cup of Quinoa in 2 cups water.
Pour the cooked quinoa into a large mixing bowl and add the following:
½ cup ground flax seed
1 chopped onion
2 stalks celery, chopped
1 grated carrot
2 eggs beaten (you can eliminate the eggs if you are strict vegetarian)
2 Tbs. Almond butter
1 Tbs. hemp butter
2 tsp. cumin
1 tsp. thyme
1 tsp. garlic
1 tsp. oregano
1 tsp. salt
Mix well together and put into an oiled glass loaf pan. Bake for 45 minutes at 350 F.
Serve with Bragg’s Liquid Aminos or salt to taste. Enjoy.
I’ve never heard of or seen hemp butter. I have hemp oil and hemp seed, but never butter. Could I use the hemp oil instead?
