
Everyone loves apple pie! But if you are on a healing journey or are being very proactive about your health, you want to eliminate the crusts and all the added sugars from a regular baked apple pie. This is a great alternative that has natural sweetness from dates and apples. The crust is chewy and is also raw. This recipe can be served as a dessert or enjoyed for breakfast or a snack. If you are concerned about the sugars from the dates, simply cut back on the dates and add Stevia. Bon Appétit!
Crust:
Soak the following overnight:
2 cups almonds
1 cup sunflower seeds
1 cup dates
Rinse the nuts thoroughly and chop the nuts in a food processor
Add the dates and the following:
1 tsp. Vanilla
1 tsp. Cinnamon
Pinch of Himalayan salt
Continue to blend in the processor until fairly smooth.
Pat the nut mixture into 2 glass pie plates or 1 rectangular glass baking dish. Continue to pat it and spread it until you have a firm even crust.
Filling:
After you have cleaned your food processor, add the following:
5 organic apples, chopped and the core removed (I prefer green apples because they are lower in sugar, but I did add a Fuji apple for color)
½ cup dates that have been soaked over night
1 tsp. cinnamon
1 tsp. nutmeg
Juice from 1 lemon
Pulse and blend until smooth
Pour over the crust and refrigerate for 1 hour. Enjoy!
