Raw Avocado Soup

Avocado is a very versatile and nutritious food. It provides over 20 essentials nutrients such as potassium, Vitamin B and E and folic acid. It is excellent as a thickening agent for raw soups and sauces. This soup is simple and very filling. You can enjoy it chilled or warm, depending on the season. Serve it with your favorite raw crackers or non GMO corn chips as an appetizer or as a meal.  Bon Appétit!

Add the following to a high powered blender or Vitamix:

2 ripe avocados

¼ onion

¼ cup fresh cilantro

Juice of 1 lime

2 tsp. cumin

½ tsp salt

2 cups organic vegetable broth. (You can gently warm the broth to make a warm soup or you can use cold broth. If you choose the cold version, let the soup sit in the refrigerator for about 2 hours.

Pulse and blend until smooth.

Serve in clear glasses to enjoy the beauty of the sultry green color. Top with fresh cilantro.  Enjoy.
