
Soups are always satisfying in the cold winter months. This soup can be gently warmed to give you the hot soup sensation, but in essence it is a raw soup. Borscht is a traditional dish from Eastern Europe, but became very popular in North America as more people immigrated. Beets are an excellent source of C, Iron and Magnesium. The down side is that beets are high in natural sugars. Because of the high sugar content, this dish would be served only occasionally, especially if you are on a healing journey. Bon Appétit!
Chop up 3 beets and place in a Vita Mix with the following:
1 onion, cut in quarters
3 garlic cloves
3 stalks of celery, chopped in quarters
2 cups broccoli, stems and all
Gently warm 3 cups organic chicken broth and add to the Vita Mix. If the soup is too thick for you, add more broth.
Sprinkle various herbs according to taste. I like Bragg’s Organic Sprinkle and Kelp Sprinkle. Salt to taste.
Blend on high until well puréed.
Serve plain or with a spoon of cultured organic sour cream.
